Bodegas Toro Albalá has been creating quality vinegars in Moriles since the mid-twentieth century. The production and ageing of vinegar is an activity traditionally linked to the wineries of the Cordoban countryside.

Vinegars are created by experts in fortified wines, using high quality wines from Bodegas Toro Albalá as their base. A high acetic acid content and aromatic complexity in particular are the characteristics that these fortified wines bring to the vinegars.

Vinegar ageing takes place in Spanish oak barrels over a long period of time, in the style of winemaker, Antonio Sánchez.  The influence of the natural environment over time on the wine that forms the base for the vinegar results in vinegars with personality characteristic of their vintage.

Vinagre Gran Reserva (Gran Reserva vinegar) and Vinagre Balsámico al Pedro Ximénez (Pedro Ximénez Balsamic Vinegar) both conform to current regulations for Montilla-Moriles PDO vinegar

Vinagre Gran Reserva is made using fortified wines and aged for more than 30 years.

Vinagre Balsámico al Pedro Ximénez is made using fortified wines and must from Pedro Ximénez grapes.
